I’m not gluten-free, but I realized my three favorite meals lately are and I had to share them with you! These meals are staples in my diet, not only because they are healthy, but because they are super easy to make.
1.Pad Thai
I created this recipe after getting so frustrated that my local Asian restaurant could not make Pad Thai for me without fish sauce. This is my most popular recipe to date on my blog and it’s no wonder why…it’s the best Pad Thai I’ve ever had in my life! (Not to toot my own horn or anything.) You can use any noodle base in this, but I use brown rice Pad Thai noodles to keep it authentic. You would never know the noodles were gluten-free, they’re so delicious.

2. Red Lentil and Potato Curry Stew with Spinach
My grandparents came to visit last year for my graduation. My grandma is an excellent cook, but she isn’t vegan like my mom and I. She was looking through the Kroger magazine, Live Naturally, and stumbled upon a vegan curry stew recipe! She decided to make it for all of us and I thank the heavens she did! We all took the first bite and were amazed at how flavorful it was. My non-vegan grandparents even enjoyed it. It has now become a staple dinner for me, so much so that I usually double the recipe for leftovers. Make sure to top with cilantro and add extra salt!

3. Cheesy Cauliflower Pizza
As I mentioned in one of my previous posts, a gluten-free vegetarian/vegan cafe opened right across from my house. They make a MEAN cauliflower pizza. It’s so good, I found myself craving it every day after I had it. I decided to make my own, and scoured Pinterest for recipes. I found a really good one! I top it with pizza sauce or pesto, vegan shredded cheese (I use the Follow Your Heart mozzarella shreds), artichoke hearts, spinach, tomatoes, red onions, and sundried tomatoes. Another one of my favorite combos is BBQ sauce, BBQ jackfruit, cilantro, spinach, and tomatoes! Just be creative.
