I live in a small town right outside of Savannah, Georgia. Until recently, we didn’t have very many vegan options, but then an amazing cafe & health food store opened right around the corner from my house! The Green Spork Cafe & Market is all gluten-free and vegetarian/vegan offering a variety of delicious treats. The owner, Kimberley Jardine, is so warm and welcoming, always offering me yummy samples of whatever new things they have made that day.
One of my favorite things they serve are almond choc chippers, and I was so happy to see that she shared this recipe with the community to enjoy! How to Make Gluten-Free Vegan Chocolate Chip Cookies
These cookies are gluten-free, paleo, vegan, and optionally oil-free. You can even enjoy it as cookie dough – which I do sometimes!
These cookies are so easy and quick to make – you could probably do it in your sleep! They’re so simple that I’ve made several substitutions different times and they always turn out delicious!
You have the option of making these cookies indulgent with the coconut oil or you can make these cookies oil-free by substituting equal parts almond butter. If you do this, use almond butter that is liquid-y enough to ensure the cookies are not dry and that you can easily mix the batter together.
If you wish to make these cookies sugar-free, you can use monk fruit syrup instead of maple syrup and sugar-free chocolate chips, I like the Lily’s brand that are sweetened with stevia!
Simply mix all ingredients in a bowl and pop them on a baking sheet and BOOM you’re done! Easy enough, right?
Gluten-free Almond Chocolate Chip Cookies
Ingredients
- 1 1/2 cups almond flour
- 2 tbsp cornstarch
- 1/4 tsp salt
- 1/2 tsp baking soda
- 2 tsp vanilla
- 1/3 cup maple syrup
- 1/4 cup melted coconut oil (OR almond butter if oil free)
- 1/3 cup vegan chocolate chips
Instructions

Preheat oven to 350 degrees F.

Line a baking sheet with parchment paper.

In a bowl, whisk together almond flour, cornstarch, salt, and baking soda. Mix until ingredients are combined. Set aside the dry ingredients.

In a different bowl, combine vanilla, syrup, and coconut oil and stir until combined.

Add the wet mixture to the flour mixture and stir until both mixtures have been incorporated and form dough.

Fold the chocolate chips into the dough.

Using a 1.5 tbsp cookie scoop, scoop the mixture onto the parchment paper.

Bake for 10-15 minutes. Cookies will appear slightly golden.
