Healthy Vegan Pasta Salad

Ingredients

  • 1 - 8 oz. box Explore Chickpea Fusilli
  • 12 oz (1 container) campari tomatoes
  • 1 avocado cubed
  • 2 1/2 tbsp olive oil extra virgin
  • salt and pepper to taste you definitely want to add this
  • hemp seeds for garnish

Instructions

  1. Cut tomatoes into quarters.

  2. Boil Explore Chickpea Fusilli according to packaging instructions.

  3. Strain the fusilli and make sure to get ride excess water.
  4. Turn the heat off of the oven.
  5. Cube avocado. 
  6. Pour fusilli back into pot (not-headed) or mixing bowl, add in tomatoes, avocado, olive oil, salt and pepper. Mix together, sprinkle hemp seeds on top and serve.


    Enjoy!

    (Note: you can use chickpea shells for this if you don't want to use fusilli, but I like the shape better. You can also add in whatever spices or herbs you like. I think fresh diced basil or parsley would be amazing)
