Gluten-free Almond Chocolate Chip Cookies

Ingredients

  • 1 1/2 cups almond flour
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp vanilla
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil (OR almond butter if oil free)
  • 1/3 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.

  2. Line a baking sheet with parchment paper.

  3. In a bowl, whisk together almond flour, cornstarch, salt, and baking soda. Mix until ingredients are combined. Set aside the dry ingredients.

  4. In a different bowl, combine vanilla, syrup, and coconut oil and stir until combined. 

  5. Add the wet mixture to the flour mixture and stir until both mixtures have been incorporated and form dough.

  6. Fold the chocolate chips into the dough.

  7. Using a 1.5 tbsp cookie scoop, scoop the mixture onto the parchment paper.

  8. Bake for 10-15 minutes. Cookies will appear slightly golden.
